Breakfast Pie

I don't know about you, but sometimes I really don't feel like making a gourmet breakfast. I'd rather get an extra 30 minutes of precious sleep and grab a box of sugar-loaded cereal. Now, I know this is really unhealthy, so I'm trying to be better about eating good breakfasts. I also know that Ross won't take the time to make himself anything if there isn't something waiting for him. The solution to my problem is to make things ahead of time that we can just grab or reheat during the week.

My first attempt is a breakfast pie. Think quiche, but more hearty and without a crust. This pie has pretty much every breakfast staple - hash browns, sausage, bacon, eggs, cheese, and even kale. It has a wonderful flavor and is EXTREMELY filling. Even Ross eats it! (Which is saying a lot; if he sees anything green in his food its usually a no-go.)

I created this recipe just by throwing things I had around in and added the basic amount of eggs and liquids until it had enough "juice" to cook into a pie and not some weird dry, crunchy monster.

Ingredients:

2 cups finely chopped Kale

1/2 lb. ground pork sausage

4 eggs

1/4 cup heavy whipping cream

1/2 cup milk

1 1/2 tsp. Italian seasonings

4 strips of cooked bacon, cut into pieces

2 cups frozen hashed browns

1 cup mozzarella cheese (reserve 1/3 cup for top)

Salt and pepper to taste

Directions: Preheat oven to 350 degrees Fahrenheit. After cooking sausage and bacon, combine all ingredients and pour into greased pie dish. Sprinkle remaining cheese on top. Cover with foil and bake for 30 minutes.

Remove foil and bake for another 10 minutes at 450 degrees Fahrenheit.

Allow breakfast pie to set for 10 minutes after removing from oven.
