Cracker Candy

In my family, we love anything chocolate, sweet, or bad for us. One of Ross's favorite things I make is Cracker Candy. I first discovered this recipe on one of those Facebook videos where they make everything look so easy and delicious, but sometimes the reality is far from that. When I saw the recipe for cracker candy, it was right around Christmas time and my mom and I were looking for a new recipe to try out. We made one batch of this recipe, and I was surprised at how easy it really was! Everyone loved it, and especially Ross was hooked. Almost every week he now asks me when I'm going to make more of what we call "Crack."
After finally getting settled after our move, I promised that I would make him some. He insisted that I make two batches so that we could freeze some and have it last longer. I didn't have enough crackers, so he ran to the store to get some. I'm sure he went just to help me out. It had nothing to do with him wanting his candy, right?


Start out by preheating the oven to 350 degrees and lining a cookie sheet with aluminum foil. Make sure you spray the foil with non-stick cooking spray because you do not want to pick pieces of aluminum foil off of your candy! Line the sheet with saltine crackers. It takes about a whole tube for one sheet, or about 40 crackers. You can break some crackers to fit in the cracks and ends to make sure you get the most candy out of the bath you can!

Next, melt 2 sticks of butter on low heat in a saucepan. Once it's melted, add 1 cup and 2 Tbsp of packed brown sugar and turn up the heat to medium. Stir constantly until it starts to boil, then set the timer for 3 minutes while still stirring.
Quickly pour the butter and sugar mixture over the crackers and then I like to use a spoon or spatula to help smooth it over the crackers evenly. This creates the toffee kind of texture and absorbs into the crackers. Ross loves to lick the spoon after this because it tastes just like those Werther's caramels your grandma always has in her purse. Pop the crackers into the oven for 5 minutes.

After baking the crackers for 5 minutes, take out and pour a whole bag of chocolate chips on top. I like to use semi-sweet, but you can use whatever kind you like! Place a sheet of aluminum foil over it for 3 minutes to allow the chocolate chips to melt.

After the chocolate chips have melted, spread it out evenly over the crackers and add whatever toppings you'd like! I did two batches - one with walnuts on top and the other just had some sugar sprinkles. Ross was a great helper spreading out the chocolate! I think licking the spoon might have been a motivator. Once you've added your toppings, you stick the trays into fridge or freezer to set. My freezer isn't wide enough to fit the trays, so I use the fridge and let it set overnight. I have stuck it in the freezer before, and it usually only takes a couple of hours that way. You can also freeze the candy after it's done to make it last longer.
